Traditional Neapolitan ovens have small openings for a reason: a wide mouth bleeds heat and the chamber never fully saturates. Gozney Neopolitan Arch fits into the aperture of the Dome Gen 2 and narrows it, letting the oven reach full heat saturation and turn out a pizza in as little as 45 seconds. Sized so a 12-inch or 14-inch peel still passes through.

Care & Maintenance

Let the arch cool fully before removing it — it sits directly in the oven mouth.
Do not exceed 845°F with the arch in place.
Wipe the stainless with a damp cloth once cool and dry it.
Brush ash away from the seat before refitting so it beds down flush.
Take it out and store it indoors when the oven is covered for the season.
